The Estate: Where the Waverley Wool Dye-Works Once Stood
The Waverley Hills name carries a specific piece of South African industrial history. The estate is positioned opposite the original Waverley Wool Dye-Works — a facility where blankets were produced during the First World War and the Anglo-Boer War. The Du Toit family, who have owned and farmed this land for generations, chose to honour that historical connection in the estate’s name. The decision in 2002 to enter the organic wine market was a bold one — at that stage, certified organic viticulture was a niche in the South African wine industry — and the subsequent growth of the estate’s reputation for organically produced wines with genuine fynbos character has validated that choice decisively.
Organic Viticulture: No Chemicals, Just Nature
Waverley Hills’ organic approach is not a marketing claim — it is a certified, independently verified commitment. The estate uses no chemical fertilisers, herbicides, fungicides, or pesticides in the vineyard. Only organic elements like copper and sulphur are applied when necessary, and natural predators are used to control harmful pests rather than chemical sprays. International certification body SGS verifies Waverley Hills as an organic wine and olive producer.
The estate features a tasting room, restaurant, deli, fynbos nursery, walking and mountain biking trails, and caters for weddings, conferences, and picnics. A natural vineyard uses no chemical fertilisers, herbicides, fungicides, or pesticides.
The result is wines described as “extremely smooth with soft ripe tannins and a robust fynbos (garrigue) characteristic” — a style that reflects the organic approach’s enhancement of natural flavours. Grape varieties grown on the estate include Cabernet Sauvignon, Merlot, Mourvèdre, Shiraz, Viognier, and others across the estate’s 30 hectares of organically farmed vineyards and olives. The estate also produces MCC (Méthode Cap Classique) sparkling wine. Estate wines are priced from R70–R90 and premium range from R130–R230.
Olive Products: Brine, Air-Dried, and Olive Oil
Alongside the wines, Waverley Hills produces a range of fine organic olive products: olives in brine, air-dried olives, and a small amount of olive oil. Olive tasting is available at the tasting room alongside the wine tasting — a dual-product experience that is relatively rare in the Cape Winelands.
The Wedding and Conference Venue: 120 Guests, Spectacular Views
Waverley Hills’ newly built wedding and conference venue offers some of the most spectacular views of the Witzenberg Valley and mountain range in the Tulbagh Wine Route area. Our newly built wedding and conference venue boasts some of the most spectacular views of the area and can accommodate small to large groups of up to 120 guests. Our unique venue offers country style charm in a rustic fynbos setting to suit all occasions – weddings, private work functions, conferences, birthday parties and other special occasions.
The Wedding Chapel
Alongside the conference venue, a dedicated wedding chapel set within the fynbos-landscaped surroundings provides the ceremony space for couples who want to exchange vows in one of the most naturally beautiful settings in the Western Cape interior.
The Restaurant and Deli
The restaurant at Waverley Hills overlooks the valley and rolling vineyards, and serves food crafted around the estate’s organic produce philosophy. When visiting the estate, you can enjoy wine and olive tasting in the tasting room or munch on a bit more in their restaurant with its views over the valley and rolling vineyards.
Head chef and restaurant owner Nadia is specifically praised in a recent Google review: “Nadia the head chef and owner of the restaurant accommodated our dietary requirements and made my partner’s birthday a magical experience. Fynbos Nursery, Trails, and Outdoor Activities
The estate’s commitment to conservation extends beyond the vineyards. A fynbos nursery on the property grows indigenous Cape fynbos plants — both for the estate’s own use in landscaping and for sale to visitors. Walking trails and mountain biking trails provide outdoor activity options in the Witzenberg mountain landscape.
